Mince pie cupcakes with brandy butter icing
If I tell you that I kept this recipe in a very special place since January already thinking of this Christmas series will you promise not to think I am insane? :)
These cupcakes are incredibly tender and moist, one of the most delicious cupcakes I have made so far; they are so good that a simpler icing could be used with great results – or no icing at all.

PiƱa Colada cake
This is the cake I made for my MIL’s birthday; I’d already set up my mind to bake a chocolate cake, but when I called her to ask which flavor she wanted she told me I was being kind enough to bake her the cake, so she would not choose the flavor – I should do that, instead; just what I needed to try a different cake from my favorite layer cake book. :D

Vanilla bean macarons with roasted strawberry buttercream

Marbled lemon-blueberry butter cake
I’m afraid of certain things. Robert de Niro and his long nails, Dakota Fanning – they scare the bejeesus out of me. And I almost had a heart attack the night I dreamed that Amy Winehouse was my doctor.
Making jam?? That is pretty scary. I think I could mix the ingredients together and check the jam for doneness, but I couldn’t sterilize jars correctly if my life depended on it.
