Dry Capsicum Chicken in tomato sauce

Chicken is one of the most experimented foods in everyone’s kitchen. I have experimented with chicken breast pieces with some onions and capsicum. It’s really wonderful to have. Actually breast pieces are very non juicy in nature and at my home everyone is asking for leg pieces. But a chicken can have only 2.

So I generally try to cook something different with the breast pieces. This time I got success, hope you will like the recipe too.

Preparation Time: 30 min
Ingredients:
Curry patta
2 tbsp tomato sauce
1 big onion finely chopped
1 big capsicum finely chopped
Cut chicken pieces in small cubes
1 tbsp jeera powder
1 tbsp dhania powder
1 tbsp ginger garlic paste
2 green chillies finely chopped
1/2 tbsp chilli powder
Mustard oil
Salt to taste

How to cook:
The recipe is very simple. In a separate bowl marinate the chicken cubes with salt and mustard oil and keep aside.

In a pan add oil and chopped onions & curry patta. Add capsicum and chillies as well. Fry them well.

Now add all the masalas and chicken cubes. Cover the pan and low the flame. All the ingredients are now cook in low flame and they will get soft gradually.

When you fill the chicken is cooked well, increase the flame and try to dry the dish. By the time chicken will start removing oil. Be careful, it might get burnt if not stir frequently.

At last, add 2 tbsp of tomato sauce in the chicken and mix properly. It will look spicy and juicy. Awesome.

Serve hot with onion slices.

Tandoori Chicken at Home style

Tandoori chicken is one of the most favourite starter of many of us.And I know that we have to go out in a restaurant always if want to have it.But here I will tell you how you can prepare this dish at home very easily.

I have done this with a difference.Yes I have added few vegetables also so that we can have the fusion taste of veg & chicken.And believe its a wonderfull experiment.

Its my own style tandoori chicken with lot of passion and new flavour.My family loved that most, and I am sure you will also try this and surprise your family. Lets start preparing.

Preparation Time : 45 min

Ingredients:
1 full chicken cut into 4-5 big pieces(I opt for skinless chicken)
1/2 cup plain yogurt
2 tablespoons fresh lemon juice
1 tbsp of Ginger
1 tbsp garlic
1 tbsp Jeera powder
1 tbsp Dhania powder
1/2 tbsp chilli powder
2-3 green chillis chopped
Chopped Carrot
2 Chopped onoins
1 big potato cubes
1 capsicum chopped
Salt to taste
Vegetable oil

Now we will prepare tandoori Masala:(You can purchase the packed masala from market also)
7-8 Cloves (Lavang)
little Nutmeg (Jaiphal)
little Mace (Javitri)
1 tbsp Cumin (Jeera)
1/2 tbsp Fenugreek (Methi)
1 tbsp ground Cinnamon (Tuj/Dalchini)
1 tbsp fresh ground Black Pepper (Kalimirchi)
1 tbsp ground brown Cardamom (Elaichi) Seeds

Now we need to roast all these masalas and grind them to powder.Need to be carefull that they should be fine powder.

How To Cook :
First of all we need to prepare our chicken.This is the most time taking part.
Wash the chicken properly ans put in a bowl.You have to cut the chicken body with knife so that masalas can go inside chicken pieces.

Now add yogurt, prepared tandori masala and other spices to chicken. Marinate them throughly.Now refregerate these marinated chicken for 7-8 hours or over night if possible. We want the masalas to mix with chicken.

Now we will start ou final preparation. I have prepared this dish in my electric oven. You can do that in pressure cooker or offcourse microwave.

Add some vegetable oil in the bottom of that container whichI ll put into my oven. Now take out the marinated chicken and add them in that container. Add all the chopped vegetables over the chicken and spread the marinated masala over the vegetables, which is left in that bowl.Add little salt and ghee over the vegetables.

Now its time to cook. Close the oven lid and cook for 40-45 min.
If you use pressure cooker you have to be very carefull.The flame should be very low or you can place the cooker after putting a tawa. This will supply even heating.

After 40-45 min check out the chicken. You can feel the aroma of chicken.
By the time the chicken will be perfectly cooked and also you ll see that little bit of burn aroma,like tandoori chicken.

All the vegetables are also well cooked and will give a perfect combination with the chicken.

Have this with roti or rice.

Chicken Korma or Dai Chicken (Chicken with Curd)


Chicken korma or you can say Dai Chicken,I think dai chicken is very familier to us.Its very tasty recipe and a thick gravy chicken dish which we can have rice/roti/nan etc.And this one is the potato free chicken dish.So this is for everyone.

Preparation Time: 35 min
Ingredients:
1 kg Chicken(Make medium size pieces)
100 gm curd
1 tbsp Turmeric powder
1 1/2 tbsp Jeera Powder
1 1/2 tbsp Dhania Powder
1 tbsp Ginger paste
1 tbsp garlic paste
2-3 cinnamons
4-5 Cardamons
9-10 black paper seeds
5-8 cloves
3 big onions finely chopped
6-7 green chilis
1/2 garam masala powder


Merination:
First wash the chickens properly and dried out the complete water from the chicken.For this you can put the chicken under fan for 2-3 min.After that put the chicken in a bowl and add salt (as per required) and curd in it.Now stir the mixture properly and merinate the chicken.After this put the chicken for 1 hour in refrigerator.

Preparation:
Now in a big pan (for 1 kg chicken) add musturd oil in enough quantity to fry the onions.Now heat the oil and add all the raw masalas (Cinamons,cardamons,cloves etc).And wait till you feel the aroma of all these masala.Then add the onions and green chilis to this pan and stire properly.

The onions need to fry in a low flame till brown.By the time you can take out the chicken which was kept inside the refrigerator.

Check the onions regularly so that they dont get overfried.If you feel its enoough fried, you can now add rest of the masalas(Jeera powder,dhania powder,ginger & garlic paste) to the onions.Stire the mixture properly.

Now add the merinated chicken into the pan and mix them well.After that cover the pan and reduce the flame to low.Need to stire the chicken mixure after 3-4 mins.After 20 mins increase when the chicken are properly cooked(not over cooked), you can increase the heat and dried out the extra water in the chicken mixture.

After dried out of the water, we can see the chicken oil and curd ll come out and then fry the chicken in that oil for next few min.But need to be very carefull as the flame is high.

Now after enough fry, add 2 cups of water in the chicken.Mix all the masalas and chicken in the water and cook for next 3-4 min in high heat so that the gravy can be thick.

Need to add little garam masala powder and your chicken korma is ready.

Serve hot with chopped onions and paratha/butter nun.

Bengali Chicken Curry (Spice Chicken Curry with potato)

Chicken Curry in bengali style is bit different than how non-bengalis prepare.Actually we add potatos in chicken curry,which non bengalis found very odd.

Even I was asked many times why we put potatos in a chicken dish.The answer is simple, We love potatos.Without potatos we bengalis cant survive. So here I am going to post a very typical chicken dish today.Its the simplest recipe of chicken,but very very tasty with steamed rice.


Preparation time: 1 hr
Ingredients:
1 kg chicken chopped in medium size pieces
2 big size potatoes chopped in cube size
5-6 onions cut in 4 piece each
6-7 green chili2 tomato chopped
2 tbsp ginger paste
1 tbsp jeera powder
1 tbsp dhania powder
1/2 tbsp chicken powder (easily available in any kirana shop)
10 garlic cloves choppedsalt as per taste
3 tbsp Mustard oil to marinate the chicken
1 bay leaf
1 onion finely chopped
1/2 tbsp garam masala powder
1 tbsp Turmeric powder

Marination: Wash the chicken pieces properly and put in big bowl.Now add all the masalas/spices,potatoes,onions and tomatos.Add mustard oil and then mix them all thoroughly.You can see the chicken pieces are covered with oilly masala after proper mixing.Now put this mixture in refridgerator for 10-15 min.

Preparation: Heat a big size pan with mustard oil on it.Then add bay leaf and Garam masala powder.After that add chopped onions and then fry for a 1 min.Now add the marinated chicken on this pan and stir properly and mix all.

Now keep the flame  low and cover the pan.This way we need to cook for 15-20 min so that the chicken can boil properly.Need to stir the chicken in between.After that increase the heat and you can see chicken will loose its oil and pieces will now fry in that oil.

Keep frying for 5-10 min in a high flame.Need to stire frequiently in this stage.After this need to add enough water in it.And then cook for next 5 min in high flameso that the curry prepares properly.

We generally prefer light curry (jhol) in this chicken recipe so that we can have this with steamed rice.Or else you can reduce the curry and make it thick and have it with roti/luchi.

It tastes really good.
