Gajar Bhath (Carrot Fried Rice)



Rice is a very common item for most of us. Sometime I feel very boaring having same rice every day. So I have done some experiment with carrot and rice and found carrot fried rice. It turns very tasty and also added a lot nutritious value as well.

Preparation Time: 40 min
Ingredients:
2 cup rice
2 onions chopped finely
1/2 carrot finely chopped
1 capsicum finely chopped
2 green chillis finely chopped
1 tbsp sauf (Misti jeera)
1/2 tbsp turmeric powder
Salt
1 tbsp sugar
1 tbsp ginger garlic paste
1 tbsp soya sauce

How to cook:
This recipe is a very healthy one as I have not added any masala. Just simple vegetables and little bit spices.

First of all wash the rice properly and cook for boil. Add chopped carrot also into the rice. You can add little bit of salt to that.

Now in a separate pan add refined oil and heat it. Add jeera to sit and wait for 1-2 min. Add chopped onions, chilis and capsicums to it. Add little salt as well. Add turmeric powder. Now fry them till they turn brown.

By the time the rice gets cooked. Be careful about the rice. It should not be overcooked. You can cook 80% as we will fry the rice later.

Drain the water from the rice and carrot mixture and keep them under fan to get cool down. Now take a look at the pan. Add ginger garlic paste to the fried onion and capsicum and fry for few more minute.

Now add rice to this fried mixture and mix them with the rice. Add little more salt and sugar to the rice. Stir regularly to mix the rice with all the fried vegetables. Finally add soya sauce to it and finish cooking.

Serve hot with any curry. Better to go for a thick gravy paneer or chicken item.

You can add lot of vegetables to this rice. My family liked it very much and due to less masala and oil, it actually increases taste and health value.

Mango : the king of all fruits has finally arrived

The summer is in its peak, days are passing like waiting for some relief. But still we have something to enjoy in these worst days of the year. It’s the season of Mangoes, the king of all fruits. I just can't express my feelings how tough it is for me to wait throughout the year for this lovely juicy fruit. I know most of us are waiting for this fruit as well.

Well mango is not just a simple fruit to taste. Definitely it tastes and soothes a lot, but besides this mango has its own health benefits as well.

I am not a doctor, but yes want to share my knowledge with everyone who follows my blog or who does not like mango. I think hardly there will be anyone who doesn’t like mango.
  •  Anyway, mango is a very good food for digestion. If you have problems of indigestion, you can improve your digestive system with having lots of mangoes.
  •  It has high vitamin C and fiber which reduces cholesterol.
  • Mangoes are very helpful for kids to improve their concentration and boost memory.
  •  For girls, mangoes are very good for skin. It clears the dirt of skin and makes it clean. And also a source of iron as well.

There might be many other benefits. But the thing that I want to share is, have lots of mangoes, as it’s available for next few months only.

You can have many recipes with mangoes like milk shake, mango panna and many other lunch/dinner recipes as well. I used to read the magazine "SANANDA" where I found a lot of mango recipes. I might not have tried all of them, but will share them all gradually.

      Finally I want to share few pics of  Mangoes of my native. I spend my childhood with lots of sweet mangoes during summer. We have few mango trees at home. Got few pictures of those yesterday. Can't wait for them, it will take some time for those mangoes to reach me.

Aloo begun diye RUI macher patla jhol (Rohu fish curry with potato & Brinjal)


Today I want to share a very simple recipe of rohu fish that we Bengali used to have 2-3 times in a month. May be much more even. This is so simple recipe and not at all famous or renowned. But we love this recipe as a daily dish.
Its Rui macher patla jhol with aloo and bengan. This is actually a very healthy combo recipe with fish, vegetables with lot of water. Thus it’s called patla jhol. We preferred this one with steamed rice. A very tasty and sada recipe of our kitchen.

Preparation Time: 30 min
Ingredients:
4-5 piece Rui Mach (Pieces of Rohu fish)
1 Brinjal cut in big cubes
1 big Potato cut in cubes
1/2 tbsp Ginger paste
1 tbsp Jeera powder
1 tbsp turmeric powder
1 tbsp dhania powder
3 green chilli slit in between (not chopped)
1 dry chilli
1 bay leaf
Panch foron (Mixture of raw masalas)
Chopped coriander leaves
Salt to taste
little sugar
Mustard oil

How to Cook:
First of we need to wash the fish pieces properly and marinate them with turmeric powder and salt. Add mustard oil in a pan. Put the marinated fish pieces when the oil is hot. Fry the both side of the fish pieces properly and keep them aside. Now add more oil into the pan. Wait till the oil is hot. By the time wash the potato and brinjal cubes properly.

Now add panch foron masala, bay leaf and dry chilli into the oil and stir them. Now add potato and brinjal cubes in the pan. Add salt and turmeric powder and green chillies. Stir them and mix everything properly. Now cover the lid of the pan. Next 10-15 min we have to check the vegetables and stir them time to time, so that they cook and fry properly.
When they are ready, now we will add ginger paste, jeera powder and dhania powder in it and again stir. Finally we will add water. We need to add a bit extra water so that after adding fish pieces the JHOL remains as we want. Wait for 5 min to mix everything in water and a uniform soup of brinjal and potato with masalas will be ready. Now add the fish pieces and chopped coriander over the curry. Add a pinch of sugar.

Cover the lid and cook for next 5 min. don’t cook more time as the coriander leaves will then overcook and mix much. A simple soupy fish curry. Serve hot with steamed rice and enjoy your meal.

Soya nuggets ( Crispy soya granule balls)


Soya Nugget is a very simple and easy to make snack. A very tasty & healthy recipe, again for potato lovers. Before today I have never tried this. Actually I discovered soya granules first time last week. Sounds odd that I never heard about that. But its true and strange how I missed that. The pakoras were very tasty indeed.

Preparation Time: 30 min


Ingredients:
1 cup soya granules
2 medium potatos
1 big onion finely chopped
1 green chilly finely chopped
1 carrot finely chopped
4-5 beans finely chopped
Few curry leaves
1/2 tbsp raw jeera
pinch of sugar
Salt to taste
Little raw suji
Chicken Masala (you can use sabji masala also)


How to cook:
First of all take the soya granules in a pan with water & bring it to boil for 5 min. Take it out & drain it completely.


Now cut the potatoes in medium pieces and put in a cooker to boil. Now after 3-4 whistels, we will take out the potatoes in a bowl.








In a pan heat oil and add raw jeera & the curry leaves. Add the chopped onions, carrot, beans and chilis to it. Add little bit salt and stir well. Now add the boiled soya granules  After few min add the boiled potato & stir for few min, so that evrything get mixed well.  


Now we can put the flame off and make the dough to cool down. Now make small round balls with hands & press a bit. 


Heat oil in another pan for deep frying. When the oil is hot, be ready with the balls.Take one ball dip it into the suji & put into the hot oil. This way finish all the balls. Fry them in low heat. 


Serve hot with salad/onions & tomato sauce. Enjoy.

Began Bharta (Smashed Spicy Eggplant)


Began Bharta is a very popular and widely preffered home made recipe. This is like a dish of every indians.
The preparation not at all new, in fact every indian women know this recipe. But I want to share this one from my kitchen in My style off course.

Preparation Time : 30 min
Ingredients:
1 Eggplant/Big fat Brinjals (should be big and fat)
1 medium size tomatoes finely chopped
1 chopped onions
1 green chili chopped
2 tbsp Musturd oli (Mastered oil has its own flavour in this recipe)
1/4 tbsp jeera powder
1/2  teaspoon turmeric
1/2  teaspoon red chili
Salt to taste
Chopped Coriander leaves

How to cook:
Generally the best way to cook the brinjals are to cook in deshi oven, which geberally you cant expect in our modern life.So I have cooked them in gas flame only. Before that I have messaged the brinjals with oil and the put them in flame. We need to do it carefully and rotate the brinjal frequently so that it should not burn.

Now its done. Keep it cool and remove the covers from the brinjal.

Now in a pan heat oil and add chopped onions & green chills.Add salt and turmeric powder as well. Fry them for 2-3 min. Now add tomatos. Fry them in high flame.After few minutes when the tomatoes started leaving water we need add the other masalas and coriander leaves.

Stir them properly and our masala is ready now.

Now add the cooked brinjal to it and stir continuously till everything mixes smoothly. If it mixes well, you cant able to find any item separately.

Serve hot with roti/rice or Parathas.

Dimer Jhol (Egg Curry)


Today I will share a recipe which normally we prepare when we feel a urge to eat something tasty but......... Egg curry or dimer jhol is a preparation which is loved by everyone. You can say its a very common dish for through out the world.

Definately the preparation might be little bit different. Today I ll post the simple Bengali style Egg curry.

Preparation Time:20 min
Ingredients:
4 Eggs
1 Big size potato cut into medium pieces (cut 1 potato into 8 pieces)
1 tsp Garam Masala
1 tsp Cumin powder
1 tsp corriander powder
1/2 tsp Kashmiri Lal Mirch
2 Green Chillies finely chopped
2 big onions cut into pieces (cut 1 onion into 6 pieces)
2-3 pieces of lahsun chopped
1 Bay Leave
1/2 tsp Turmeric Powder
Salt to taste
Pinch of Sugar

How To Cook:


Boil the eggs for7-8 min. Take them out & peel them. Now cut each egg into 2-3 pieces with a sharp knife and merinate them with turmeric powder and salt. Heat mustard oil in a pan & gently fry the egg pieces. We need to very carefull while handling the eggs in the pan,as the egg yolk is very soft in nature. So chances of breaking is there. Keep the fried eggs aside.

Now fry the potato pieces in the leftover oil or if required add 1-2 tsp of oil & keep them aside.

Again heat the pan with little oil(3-4 tsp). Add the bay leave & stir for 1-2 min. Now add the onion & lahsun and fry for next few minuts. As the onions get brown, add salt, green chillis, Cumin, corriander, Kashmiri Lal Mirch  & Turmeric  powder & stir for 2-3 min.

Pour around 200ml (a glassful) water.

If required add a pinch of sugar. Now add the egg pieces & the garam masala powder. Cook for 7-8 min  It will be a gravy curry.

Serve with hot rice.

Prawn Cucumber Curry


Today I will share another recipe with small size prawns(kucho chingri). There are different sizes of prawns available in market. This recipe is made with small size prawns.But you can prepare this with medium ones also.This one is a good recipe for health.

Easy digestible and healthy.Its not at all spicy and tastes like sukto.

Preparation time: 20 min
Ingredients:
1 cup fresh prawns properly cleaned and washed
3-4 big size cucumber cut into small pieces.
Coriander leaves finely chopped
2-3 green chilis finely chopped
Pinch of Panch Phoron
1 tsp Jeera powder
1 tsp dhania powder
1 tsp ginger paste
1/2 tbsp turmeric powder
Salt to taste

How To Cook:
Marinate the prawns with salt and turmeric powder. Heat oil in a pan and fry them in that pan. Do not deep fry the prawns otherwise they will become tender. Just keep them in the oil for 5 min and stire properly in medium heat.

Take out the prawns and keep them aside.

Now add some more oil in the pan and add the Panch Phoron & bay leave in it. Stir it for 2-3 mins & add the cucumber pieces. Add salt, turmeric powder and the green chillis and cover the pan.

After few minutes,we can see lot of water came out from the cucumber pieces. Increase the flame a bit.Now we need to add the jeera powder, dhania powder and ginger paste. Stire properly and cover it. After 3-4 min again check the condition and add the half fried prawns. If the cucumbers are properly cooked then no need to cover the pan further.

Now add chopped coriander powders. Increase the heat and stir the mixture propely so that everything can mix properly,till the time the water will get dried up. It will be a very little gravy curry.

Take it in a bowl and serve hot with plain rice.
