Aloo Chop (Crispy potato balls)


Aloo chop is a very simple and easy to make snack recipe. No complecasy in preparation, but yes this is for potto lovers. A wonderful snack specially in Bengal with moori and tea.

Leats discuss how I make one of my evening wonderfull with aloo chop.

Preparation Time: 30 min
Ingredients:
2-3 big potatos
1 big onion finely chopped
1 green chilly finely chopped
2 bread slices
1 tbsp raw jeera
Salt to taste
Sabji Masala (I used everest Sabji Masala)


For the batter:
1/2 cup of flour
Salt to taste
1/2 tbsp Jeera powder
1 tbsp Sugar
1/2 tbsp chilli powder
1/2 baking powder

How to cook:
First of all we will cut the potatoes in small pieces and put in cooker to boil. By the time we will prepare bread crumbs with 2 slices of bread.

We will also prepare the batter. mix all the ingredients and make a light batter, not thick.

Now after 3-4 whistels, we will take out the potatoes in a bowl. Now in a pan heat oil and add raw jeera.Add the chopped onions and chilis to it. Add little bit salt and stir well. Our intension is to mix everyting well.

So in a high flame cook the onions. Now add Sabji masala and stir for 1/2 min. Now add the boiled potatoes and stir coarsely. By the time you can add little salt and sugar. Gradually you ll notice that everything will mashed in the pan and mixed well.

Now we can put the flame off and make the potato dough to cool down.Now make small round balls with the potato dough.

Heat oil in another pan for deep frying. When the oil is hot, be ready with your balls.

Take one potato ball dip it into the batter and then into the bread crumbs to cover the batter and then put into the hot oil. This way finish all the balls. Fry them in low heat as the bread crumbs might overcooked in high flame.

Serve hot with salad/onions or sauce. Enjoy.

Baby potatoes in spicy yogurt



Today I came accross one of sanjeev kapoors recipe.And that was really awsome. Then I thought to prepare the same recipe as a dry dish with a difference.

Its a baby potato recipe.I have prepared this as a starter dish.Its really wonderfull.All the spices are outside and potato flavor inside.When they mixes in mouth that makes like wow.

Preparation Time: 30 min

Ingredients
20-25 baby potatoes boiled properly
salt to taste
little bit of sugar
100 gm curd/yogurt
1 tbsp jeera powder
1 tbsp dhania powder
1 tbsp ginger paste
1 tbsp garlic paste
1/2 tbsp chili powder
1/2 tbsp coriander powder
1/2 tbsp garam masala powder
2 onions chopped
1/2 tbsp tomato sauce/ or you can use tomato pure
2 tbsp ghee

How to cook:
First of all remove all the boiled potato skin and make whole on potato body with a fork.

Now in a bowl, add potatoes,curd and all other spices. Marinate them properly and refrigerate them for 1 hour.

Now in a pan heat ghee.Add onions.Fry them in low flame till the turn brown.Now add the marinated potatoes.And cook them in low flame.

After some time we ll see water will come out.Now we can increase the flame and need to fry the potatoes.We have to be very careful as the onions might overcooked.So frequent stir is required.

After enough frying of the potatoes, we ll add garam masala powder and tomato sauce in the potatoes.Need to fry them till all water dried up and they ll them look like a dark spicy dry recipe.

Serve hot with rotis or fried rice.

Its yummy and really tasty.

Aloo Tikki Burger


Today I ll post a different recipe, besides our regular food.

Its Aloo tikki burger.I had it last week in Mc Donalds obviously. Everybody know that food.Its a very popular snack these days, specially for children.

I tried this in my style at home,I used egg also in that aloo tikki. I just cant believe it was so much preferred by my family.Its really tasty.

But the preparation is stepwise.So lets find out the recipe..........

Preparation Time : 30 min
Ingredients:
1 onion finely chopped
2-3 boiled potatoes
1 chopped carrot
1 egg
1 cup flor(Maida)
Burger bread cut in 2 pieces
1 tbsp raw jeera(cumin)
2 chopped green chilli
1 tbsp ginger
Salt to taste
Little sugar

How To Cook:
We ll start with the Aloo tikki preparation. Take a bowl, put smashed boiled potatoes,salt,maid and make a dough and keep aside.

Now heat oil in a pan and add the raw jeera.Wait for jeera to fry and then add onions & chopped chilli. Fry for few min.Add chopped carrot and salt.Now fry the mixture till fry.

After properly frying them, Add the egg and scrubble them all together. It ll be like egg bhurji.

Now there are 3 ways to make the aloo tikki.
1) You can stuff this mixture and make aloo balls.I followed this one.Definately to add extra taste.
2) Mix Aloo dough with the egg stuffing and them make them ball shape.
3) Or else you can simply use the allo dough(without egg stuffing)

After deciding the which aloo tikki ll choose, its time to finish the aloo tikki part.

In deep fried pan, fry the each aloo tikki till color changed to dark complextion. The size will be as per your choice. I made them quite large, as my family preferring.

Now in the bread pieces add little butter and toast lightly. Piece onions, cucumber,carrot and tomatoes as we generally put in burger.

Now its time to merge them all.

Have it with tomato/chilli choice.

Egg Poha

Poha is a India famous recipe. It is one of the best breakfast/snack mostly prefeed. But the preparation is different in place to place. In benga we used to put some sugar. In west it is prepared mostly as spicy .
Here I have prepared the poha recipe with egg. It is little spicy and little sugar added.

My family love it.

Preparation Time: 15 min
Ingredients:2 cups poha (flattened rice)
2 green chillies finely chopped
1 big onion chopped fine
2 eggs
1 tomato finely chopped
Fried peanuts
1/2 tbsp turmeric powder
Salt to taste
Sugar as per taste

How to cook:First of all soak the poha in water and immediately extract the water.Spread them over a plate.So that extra water dried out.This way you can avoid the over soaking of poha.It ll remain in shape but soft.

Now heat oil in a pan and add the chopped onions(keep some onions for egg preparation).Add the chopped chillis , turmeric powder and fry for few min.Add tomato also.Now fry this mix adding salt.

After few min add the soaked poha.Add salt and sugar as per taste.Also add the peanuts. Now increase the heat and fry for few min so that everything mixes properly. Now keep this mixture aside.

Now again heat oil in the pan.Add the left onions and fry for few min.Now add the beaten eggs to this and mix. Prepare egg bhurji. Now in this add the poha mixture we allready prepared.

Now mix everythin well and fry for next few min.

Poha is ready.Serve hot with chopped onions.

You can prepare this masala also, I will share the masala poha recipe later.

Aloo Chop with egg stuffing(Egg stuffed potato chop)


Today I have tried a very innovative but a simple snack recipe.We bengalis ,even everyone who is in bengal loves Aloo Chop(Potato chop).I ll share the chop recipe in a different style.

Preparation Time: 20 min
Ingredients:
3-4 big potatos
1 big onion finely chopped
1 tomato finely chopped
1/2 tbsp jeera powder
1/2 tbsp ginger paste
1/2 raw jeera(sauf)
2 eggs
1 cup maida
Salt to taste
Sugar as per required

Stuffing:
To prepare the stuffing, first heat oil in a pan and add raw jeera (sauf).When it starts splittering add the chopped onions.Fry them till brown.Then add the salt,jeera powder and ginger paste to add and fry for next 1 min.

Then add the tomatoes and fry till the mixture fried properly.Now its time to add the eggs.And then mix them and make it like egg bhurji.Our egg stuffing is ready.

Chop Preparation:
Now simultaneously boil the potatos in a separate container.By the time we prepare the stuffing the potatos will boil and soft properly.Add maida ,salt,sugar and little jeera powder and boiled potatos in a bowl and mix them properly.Prepare a dough.If required add more maida.

Now prepare a round ball and add the stuffings and press them a bit and keep aside.This way prepare all the chops.Now in a pan deep fry them till they fried completely.

After frying them properly cut each chop in 2 pieces and serve hot with salad and sauce.

Ghugni or Luchi Ghugni (White Peas Curry)


Ghugni is a kind of snack in Bengal,which you can find in every nook and corner of Bengal.Its very common and basic snack.Most of us start our day with a plate of ghugni with bread and a cup of tea.Or else luchi ghugni at home break fast menu.

Its very tasty and also very easy to prepare at home with in 20 min.

Lets share this recipe today.

Preparation Time: 20 min


Ingredients:
2 Cups soaked white Peas overnite
2 onios chopped in cube size(chop 1 onion into 8 pieces)
1 Tomato (chopped)
1/2 tbsp raw jeera(Raw cumin)
1/2 tbsp Garlic paste (You can use crushed garlic also)
1 tbsp Ginger  paste
1/2 tbsp Jeera powder (Cumin seed)
1/2 tbsp Dhania powder (Coriander)
1/4 tbsp Garam masala
Mustard oil
Salt to taste
1/4 tbsp sugar
10-15 soya chunks
2 green chili finely chopped

How to make Ghugni:
Its always better to soak the white peas overnight,so that they can be soft easily.Even after soaking also you have to put them in pressure cooker for 4-5 whistles.Add little bit salt while in cooker.After that drain that water and keep them separately in 2 containers.You can add the soya chunks with the white peas in cooker.

Now heat a pan with mustard oil.Add raw jeera and then add the onions.Add chopped green shilis and fry the onions till brown.Now add tomatoes and stire for a 2 min in medium flame.Now add the cooked peas and soya chunks in the pan.Increase the flame a bit and fry this whole mixture properly.
After 5 min of frying, add turmeric powder,Jeera powder,Dhania powder and ginger & garlic paste in it.Again stire properly so that masala can mix properly.

You have to be carefull while adidng the salt,as we have kept the cooked peas water apart.Which allready has some salt.So I would prefer not to add salt in the pan initially.

After frying all the peas and masalas, now add the water.Add a littlebit of sugar.Actually sugar will reduce the bitterness of the masalas,Its not like we are adidng sugar to make it sweet.The amount of sugar ll be very less.

Now cook for 5-7 min in high flame.If required you can add water and salt as per taste to it.

Finally add garam masala just before finishing.Stire it properly.You can garnish it with chopped onions and chopped coriander.Me personally prefer only chopped onions.even you can also add chopped green chili.

Ghugni is now ready.Its always best to have it with luchi.

Vegetable Cutlet

Cutlet is a good tasty snack. You can prepare this whenever you expect anyone in the evening time. But you have to start preparation for that bit early.

Preparation Time: 25 min
Ingredients:
Chopped Vegetables (Carrot,tomato,beans,capcicum etc)
4-5 potatoes
2 Green chili
1 tbsp Jeera powder
1 tbsp dhania powder
1/2 tbsp Turmeric powder
1/2 tbsp ginger paste


1/2 tbsp chicken masala/sabji masala available in market
2 onions finely chopped

 In case of chicken cutlet you can shred the chicken breast(Already cooked) pieces and make them finely chopped.

Preparation:
Heat oil in a pan. Add the chopped onions and fry them for 2 min. Then add all the chopped vegetables in that. Add salt to taste and turmeric powder. In a separate bowl put all the potatoes and boil them.

We ll use potatoes as a binder of the cutlet. After boiling them, need to smash them with salt and little sugar and keep them aside.

Now in the pan stir the vegetables properly till well fried. Then add jeera powder,dhania powder, ginger paste and chicken masala.Mix this whole vegetable mixture properly and fry till properly cooked. Now in a separate bowl put all these fried vegetables and smashed potatoes.


And also flour(Maida) and mix them altogether to make a lump. You can use Maida till it perfectly lumped. Now prepare the round balls and give them cutlet shape.

And then deep fry them in a pan.

Your cutlet is ready.

Egg Chowmein Recipe (Egg Noodles)

Egg chow mein is one of the most favorite dish I love to have at road side thelas.Most of the time after college in the evening time we grouped together to have cow mein.Its just awesome with chopped onions.

But last time when I had it on roadside vendor I forget.Recently tried near to my house,But it was not that tasty and even doesnt look hygienic.So one day I decided to prepare egg chow mein at home.I surfed many websites for the recipes and finally come up with my own recipe,which definitely includes my favorite items. I tried it in my ways and luckly it was very good.
So lets share my recipe.Nothing secret ingredients I have used.I used only the very common masalas that available at home, even less what ever is mentioned in many websites.
Preparation time: 30 min
Ingredients:  Chowmein 1 packet (enough for 2 people)
                   Bean finely chopped
                   Cap cecum  finely chopped
                   Carrot chopped in small size
                   2 Green Chilli finely chopped
                   1 chopped tomato
                   2 big Onion chopped
                   Chicken Masala
                   Jeera powder
                   Turmeric Powder
                   2 eggs
                   3 tbsp soyabean oil (I use generally this)
                   Soya sauce: 1 teaspoon
                   Salt to taste
                   1/2 spoon sugar

Preparation: First of all need to boil the cow mein properly.Take water in a bowl and add salt and sugar in it and boil.Now add the chow mein and cook for 2-3 min in medium flame.Dont over cook the chow mein,need to take care of that.Now immediately drain all the water and rinse cold water to the chow min so that each one can separate from other and then dry them under fan. You can put some oil over them so that they look smooth and separate.

Now heat the pan and add oil.Add the onions first and then rest of the chopped vegetables.Add salt and turmeric powder and fry till they turn into brown.Now there I did the experiment,You might feel this is different,but this really worked.Instead of any other masala,I added little bit of chicken masala and jeera masala..Stire them for a min and then add the chow mein.And mix everything properly.After that add the soyasauce to it.Now you can feel the aroma of chow mein.

Fry them properly and then take the noodles and veg mixer to a another dish.Now heat the pan and add oil.Now we need to put the raw eggs to it with salt and make it like egg bhurgi.Into this add the chow mein mixture. Mix them properly and then add some sugar and little bit salt as per taste.

This is done,You can now serve this hot in a dish sprinkling chopped onions oiver it with tomato sauce on it.

This is really tasty and  very healthy compared to the roadside verdors chow mein.

Chole Masala or Chana Masala (In Bengali touch)

I am posting my second recipe on the same day itself, as I cant cotroll myself to post it.
This is also a very known recipe and also one of the favourite snacks recipe for every indian.

Here I have done few experiment with the traditional method of preparing Chole Masaa/Chana Masala.I ll rather name it Vegetable Chole Masala.Let me share the recipe from my kitchen:



Preparation Time  : 25 min
Ingredients:  Vegetables like Bean,Tomato,Capcecum,Onion leaves etc.You can pick any other also.
                   2 onions finely chopped
                   5-6 cloves of garlic chopped
                   2 green chili finely chopped
                   1 big size tomato finely chopped
                   1 tbsp ginger paste
                    Salt to taste
                    Little bit of sugar
                    Everest Chole Masala (This is the main masala to make it perfect)

Procedure : First of all need to soak the chole overnite in a bowl,so that they can increase in size and also will be cooked properly.
Now take a KADAI/PAN as per your quantity.Heat the pan and put oil.You can put even ghee/butter.I generally prefer oil and butter/ghee at last phase.
After heating the oil first you can fry all the vegetables and keep them aside.
Now its time for the soaked chole.You need to put them in pressure cooker for 5-6 whistles so than they can be soft enough.Here better to add small salt,so that some salt ll enter inside chole pieces.Now again preheat a pan and put oil.In the oil first add the chopped garlic,chilis,then onions and fry them till brown.After that add the boiled choles.You can keep aside the water from the cooker which is used for chole boil,which we can use for gravy preparation.
Now keep the heat medium and stire the choles with onions and ther stuffs properly so that they can be fried altogether.Afetr that you add garlic paste,chopped tomato s and finally Everest masala.Need to add a bit salt also as per taste. Now stire them properly in a bit heating condition so that everything mixes properly.Then its time to add the vegetables and the rest of water kept aside.
Need to cover the pan and keep it for 10 min in a slow heat so that masala and vegetables mixes properly.By the time we can feel the chole masala aroma spreaded everywhere in my kitchen.
After 10 mins just need to add small sugar as per taste and butter to enhance the taste.Thats it for the preparation,just need to cook for 5 min more and it ready to eat.
You can then garnish it with tomato,coriander leaves or curry leaves as per your choice.
Generally we prefer chole with bhatura/luchi in the evening times,than morning.My hubby and me enjoyed a lot mainly on week ends with some cool drinks and cucumbers salad.
You can try this simple recipe at home only,No need to depend on the roadside vendors for chole masa as they do not maintain healty parameters while preparring these foods.

Bhatura (Big size Luchi)

Everyone of us is familiar with BHATURA which looks like a big luchi.Preparation is also similar to luchi,but have a very little difference.Here I am posting my recipe with a very common but the most tasty for any indian

What elements required to make Bhatura recipe

Ingredients: 
2 cup Maida (Flour)
Salt to taste
Sugar to taste(We Bengali used to give sugar almost every dish to taste better)
Yogurt (Well mixed in water)
Instead of Ghee we can use Butter,which smells and tastes better.Or we can use white oil like                        
Sunflower oil/soybean oil
Baking powder

How to make Bhatura 

First of all we need to mix the maida,salt,ghee/butter/oil,baking powder and sugar in a big bowl. You can remove baking powder from the list,as few people have gas problem.Then mix them properly and add water till it needed perfectly.

Then make little big round lumphs from them and make them round circle like roti.
Then put one by one in a deep fry pan and fry them till brown.

You can see they will look like puffy and big.

Ideally bhaturas are searved with Chole Masala,which is very very popular combinmation.

We bengalis can have it with well prepared ghoogni,our very very favourite food.
